3 g dry yeast

Dough:

All the poolish (after 24 hours)

375 ml water

625 g Healer’s Find Amazing All-Purpose Flour

20 g (2 Tbsp) Kosher or sea salt

 

Instructions

 

1. Make the Poolish

 

1. In a small glass or plastic container, mix the water, flour, yeast, and honey until smooth.

2. Rest at room temperature for 1 hour, then refrigerate for 24 hours to ferment.

 

2. Make the Dough (The Next Day)

 

1. In a large bowl, combine the water and poolish, stirring to loosen the mixture.

2. Gradually add half of the flour and stir until smooth.

3. Mix in the salt, then add the remaining flour, combining until a sticky dough forms.

4. Turn the dough out onto a floured surface and knead briefly. Cover with the bowl and let rest for 15 minutes.

 

3. First Rise

 

1. Lightly oil your hands and perform gentle stretch-and-folds: lift the dough from underneath, allowing the ends to fall and create air pockets. Rotate and repeat a few times.

2. Place the dough, seam-side down, in a lightly oiled bowl. Cover and let rise for 1 hour.

 

4. Divide and Shape

 

1. Divide the dough into 5 equal portions.

2. Shape each portion into a ball, keeping the top smooth and tight.

3. Place the balls on a tray dusted with semolina or flour. Lightly coat with olive oil and cover with plastic wrap.

 

5. Second Rise

 

1. Let the dough balls rise for 2 hours. For best results, place them in an unheated oven with a bowl of hot water to maintain humidity.

2. Preheat your pizza stone in the oven at 500°F (260°C) for 1 hour, or follow the preheating guidelines for your countertop pizza oven.

 

6. Shape and Top the Dough
